Non-dairy frozen desserts have their own rules. Requirements and incentives vary by country and state; confirm yours before building.

   Protect the cold chain end to end

   Ice cream lives and dies on temperature. From mix to blast freezer to freezer storage to refrigerated transport to the retailer's freezer, any break causes melt, ice crystals, and ruined product. Invest in blast freezing, monitored freezer storage, and refrigerated distribution; a cold-chain failure is lost product and lost accounts.

   Sell wholesale, private label, and retail

   A plant's revenue is breadth: wholesale to independent grocers, restaurants, and scoop shops; private label making ice cream under stores' and brands' labels; and own-brand retail into freezers. Private label and food service fill the line steadily; own-brand premium carries the margin. Distributors and a reliable frozen supply chain unlock volume.
