   Brisket prices swing hard, and meat is most of your food cost. Price by the pound with room in the margin, adjust the menu mix toward pork, chicken, sausage, and loaded sides when beef spikes, and track cost per pound cooked weekly. Sides and drinks (near-nothing costs) are where the blended margin gets healthy.

   Build the catering arm early

   BBQ is the most catering-friendly cuisine in America: it holds, travels, scales, and feeds crowds cheaply. Weddings, offices, and game-day trays sell at predictable margins with deposits up front, and for many pits the catering calendar out-earns the counter.    Extend the brand beyond the line

   Bottled sauce and rubs at the register and online, whole-brisket holiday preorders, and BBQ classes on slow weeknights all monetize the reputation the pit built. Regional style matters here: lean into your lane (Texas, Carolina, Memphis, Kansas City, or your own hybrid) and own it completely.
